Gerber Files are the most common files used for ECB fabrication. They are easily sent by email or uploaded to a FTP site or BBS (Bullitin Board System) which are often used by ECB fabricators.

Other files are:
Drill chart (if not included in the Gerber file),
Silkscreen files (if not included in the Gerber file),
Assembly drawings (often DXF or DWG)
ECB Statistics with sizes and numbers of holes.

All these files should be ISO-9000 complient in form and stored in a complient system.
This is as much a matter of sanity as it is for good business practice.
